I just made these, and for some reason, they were very underdone still at the 10 min mark. I used an oven thermometer, so I’m pretty sure the temperature was correct. I kept baking until they were finally crisp on the outside, probably around 17 or 18 mins. They were still chewy on the inside, just wondering why there was such a huge discrepancy in my baking time. That is a mystery! I’ve never had a sugar mixture solidify without caramelizing (browning) first. I’m really not sure what the issue might be. But I do experience lots of differences with my baked goods when I bake in Brazil when visiting my family for example, might be the climate, and ingredients differences, and also altitude, so it’s just a matter of finding what works best for you. Hmm, I don’t know that there is a way to make it more syrupy. When the caramel browns (caramelizes) the sugar structure changes and is then more solid at colder temperatures. You might try mixing it with a tablespoon or two of hot water before stirring it into your cold brew? Or maybe microwaving the caramel to loosen it up before stirring it into the cold brew. I used 1 egg white, 67g of powdered sugar, 33g of almond powder, 13g granulated sugar and followed your recipe and it yielded 6 macarons. I’m worried 1/2 teaspoon would be too much.1. For the love of pizza, measure with a very accurate scale. It’s so important. 2. For the measurements as written, lean to the lower side of egg white weight. I used 90g egg whites / 100g sugar / 96g almond flour, 90g powdered sugar. If you have 120g egg whites, use 100g sugar / 110g almond flour / 100g powdered sugar. 3. Measure your almond flour AFTER sifting. If your almond flour is at all clumpy, do NOT push the flour through your sifter. Instead, add more almond flour until the sifted amount is correct to this recipe. 4. Measure the powdered sugar AFTER sifting. 5. Sift almond flour and sugar together again after you’ve sifted and weighed the correct amount. 6.
